Nestled in the highlands of Alishan, Chiayi, Taiwan, Jing Long Coffee Manor is a remarkable story of transformation and resilience. Once a thriving tea farm, husband and wife duo Tony & Wan-Yu made the bold decision to transition to specialty coffee—a choice driven by their deep connection to the land and a desire to explore its untapped potential. This shift was not merely about growing coffee; it was about reimagining their roots, combining generations of agricultural expertise with a daring vision for the future.
At elevations exceeding 1,100 meters, each coffee bean embodies the meticulous care Tony and his wife devote to every stage of production—from enriching the soil to mastering the art of drying. What sets Jing Long Coffee apart is more than its exceptional quality; it’s the story behind it—a testament to the family’s resilience and dedication to preserving tradition while pioneering the future of Taiwanese coffee.
After harvesting, the coffee cherries undergo a meticulous process. They are peeled and placed in a CO₂ tank, where CO₂ is added to create an anaerobic environment for fermentation. This fermentation is carefully controlled at 15°C for 80 hours. Once complete, the cherries are dried with precision, ensuring the unique flavors of Jing Long Coffee Manor shine in every cup.
